When was the last time you tried something new?
I wrote last week about the copycat Bounty bars and Chocolate PB protein bites so I’ll risk sounding food obsessed because the time before that was when I made this Creamy White Chicken Chili by divascancook.com. I’ve always been a traditional chili fan but oh.my.lawd. People. Even my KIDS loved this chili! YUM.
If you were forced to eliminate every physical possession from your life with the exception of what could fit into a single backpack, what would you put in it?
My phone, laptop, air pods, and chargers (sorry, but true). My wallet, passport, and a good water bottle. A notebook and at least two good pens. Two pairs of undies (because hello, dry time), two comfy pairs of socks, a sports bra, shorts, a couple of t-shirts, plus my North Face jacket with scarf/hat/gloves and Birks (assuming I’m wearing my jeans, a super soft sweatshirt, and sneakers). Hair ties and deodorant because sweaty necks and sticky pits are uncomfortable. Then I’d slide two sentimental items in with all the practical stuff.
What simple fact do you wish more people understood?
Kindness changes everything. If you’re kind to other people – all other people, not just the ones you like – it shifts the energy and you end up feeling better, too.
What food item do you go through fastest in your house? (credit to Sandmanjazz)
Overall I’d say cheese. We go through a pretty remarkable amount of cheddar cheese around here, and considering I’m the one who picks out recipes I have to own this one. When the teen is carb loading then it’s definitely milk and cereal.

After nodding to kindness, I must say, cheese may well be our fastest-disappearing food, too. And I would second cereal as well. Kinda interesting. Then bread, cause toast fiends. I wonder how many households are the same.

These things make sense if you picture those aisles in the grocery store. Cereal takes up a ridiculous amount of shelf space. Same for bread. Cheese is less but a very large section relative to the other cold items. I say that means it’s more than just us.

Like everyone else, I like the kindness aspect. Your backpack seems complete except for a way to make fire. You might need that for the smores. I love the chilli recipe.

Thanks, Melanie. Interestingly enough, I found it impossible to actually *name* the sentimental things. It was just too hard to decide. I’m counting on the pressure of the moment to make clear what absolutely has to go with me.

I’m with you about kindness, especially the “all other people, not just the ones you like” angle of your answer. I’d like to see that start on social media, for instance.

Weird, right? When I sat here thinking about what it would take to live out of a backpack I realized it truly wasn’t much as long as I spanned the seasons. The harder part would be choosing a favorite book — unless I commit to kindle — and lightweight sentimental items.

Just pulling up the recipe yesterday prompted me to head to the store and make it for dinner! My only tweak is decreasing the oregano from 1 tablespoon to about 3/4 tablespoon but that depends on your preferences. Also, it’s not the kind of soup you leave on to simmer while you cut up bread or make a salad, you’ve got to keep stirring once you reach the melting cheese stage or cheese/beans stick to the bottom. SO YUMMY. Good luck!
