1. You guys ever had one of those perfect dinners? The kind where everything tastes amazing and you spend the whole meal oohing and aahing over the deliciousness? We had one of those on Saturday and it was fantastic.
2. I made steak bites that were melt in your mouth with each delectable nibble. BrightSide’s parents gave us green beans from their garden that I made in the instant pot. So very, very yum.
3. But then – and this is the part that really made the meal transcendent – there were the au gratin potatoes.
4. I should lead with the fact that I haven’t had this sort of cheesy potato dish in about three years. Except for that one time I ordered it by mistake, not realizing it had flour in it, and earned myself three hours of an excruciating stomachache for my trouble.
5. To say I was gun shy around saucy dishes for a while is an understatement. So when I spotted this recipe I was super excited to try making cheesy potatoes because, again, YUM.
6. I’m thrilled to say it was a success. More than a success, really, since we gathered around the kitchen table drooling over a side dish.
7. Side note: I took the comments about adaptations to heart and made this using 2 teaspoons kosher salt, 3/4 teaspoon pepper, and 1 1/2 cups shredded cheddar. Perfection. But you do you.
8. Other simple pleasures from the weekend: sunny days with cooler weather, skillet nachos, snuggle time with Phoebe, and hanging out on the huge beanbag with Bear and the kitty.
9. Early voting started here last week and it’s been an adventure. I’ve heard everything from people making it through in under an hour to a four and a half hour (plus counting) wait at the polling site. People are showing up, though, and they’re showing up ready to wait until they can vote.
10. Has early voting started yet in your state? How are things going? Have your counties struggled with long wait times, too? For those of you counting it’s fourteen days until the polls close on November 3rd.
I love au gratin potatoes. Nothing like cheesy goodness to make the weekend better.

Your dinner sounded delicious until you mentioned the potatoes. Sadly (perhaps) those sort of potatoes were ruined for me permanently by my mother’s efforts to make them. Disgusting doesn’t even cover it in her case, AND (oddly) both her sisters AND her mother made au gratin potatoes the same way (i.e. vile). I can’t eat those things now, but I will eat (with gusto) the ‘funeral potatoes’ (a Utah thing)..which are hashbrowns covered with sauce and cheese (and *shudder gag* minced onions). Cheesy potatoes can be great, IF the person cooking them is a good cook. Otherwise? I don’t need the carbs, thanks!
Has early voting started yet in your state? I don’t think it has, but it will this week. They’re also supposed to have our mail-in ballots sent out.
How are things going? Given the debacle with the School Board meeting last week, I’m not hopeful that it will be a peaceful, respectful of others type of thing.

I swear, the only question going ’round and ’round my head is “is ‘funeral potatoes’ the actual name of that dish or just a descriptor?” We have some dishes that only show up here at the Methodist ladies’ potluck after a funeral so I get the concept.
Here’s hoping your early voters takes the high ground. I haven’t heard of issues at the polls, just long wait times, but I won’t lie – I’m kind of holding my breath here to see if we can get through without things blowing up. Like you I’m pretty worried about what comes next. I’m okay not having an official answer on Nov. 3rd but there’s a lot of room for discord there.

The actual name in Utah is “Funeral Potatoes” but the reason for the name is the same one you gave about the Methodist Ladies group… I think the ‘secular’ world calls it “Hashbrown Casserole”. LOL..

Are au gratin potatoes the same as scalloped potatoes? I always loved those. We voted on Thursday – the first day early voting was open here. We showed up an hour after the polls opened. We live in a small county (20,000 +-) and we walked right in. No lines no waiting. Are you watching the debate on Thursday? I am decided on my vote and undecided on the debate. 😂

I was wondering about the debate too. The last one was…challenging to watch. Maybe I’ll wait and see how I feel that day?
We had to google the difference too. Apparently “true” scalloped potatoes don’t have the cheese. The hubby’s ordered them from a local restaurant and keeps forgetting that and gets sad that they’re not cheesy. 😆

That is my hope every moment of every day right now. And yes, if anything good’s come from being forced to go gluten free then eating practically all our meals at home it’s that I’m a much better cook.
