2.  Post #140 means not quite three years of weekly posts. It’s been a bit longer than three years though because when life gets to life-ing we don’t always hit the weekly mark.

3.  The first 40 Things post published on March 20, 2020.

4.  I’d totally forgotten this format was birthed in the lockdown era.

5.  The world was spinning wildly out of control and a quick 40 item blast felt like a way to gather up our odds and ends life into something manageable.

6.  Just kidding. Nothing felt manageable in 2020.

7.  It was a strange period though. So much time on my hands, so little stamina to laser focus my writing.

8.  Being able to do a brain dump post felt like a solid coping mechanism.

9.  Still can be. Anyhoo…

10.  I tried this delicious chicken recipe on Wednesday. 10/10, highly recommend.

11.  Surprising no one, I have some notes.

12.  I cannot with a straight face refer to this as chicken cobbler. No disrespect to Ms. Crissy, that makes my brain shriek eww.

13.  It uploaded into my recipe app as “Cheddar Bay Biscuit Chicken Casserole” which is wordy but more palatable.

14.  In the end I still lean toward chicken pie with a biscuit topping.

15.  Gluten free versions of both Campbell’s cream of chicken soup and Red Lobster Cheddar Bay Biscuit Mix make this gf friendly.

16.  I have a thing about frozen mixed vegetables. You like ’em, I love that for you, but they don’t do it for me.

17.  I subbed in fresh carrots, celery, onions, and peas instead.

18.  Let’s just say heavenly goodness can be that recipe’s tagline.

19.  Turns out it was a double chicken experiment week because I also tried The Pioneer Woman’s Air Fryer Chicken Parmesan.

21.  It’s been years since I’ve had chicken parmesan. I never made it at home and restaurants didn’t have a gluten free offering.

22.  Except it turns out chicken parmesan is both entirely doable and utterly delightful.

32.  Weird sensory fact: Good salmon is delightful. Salmon ever so slightly undercooked according to my tastebuds flips into ick territory.

33.  Random childhood memory: Soccer games determined the McDonald’s experience. Win? Milkshake. Lose? Water. Tie? Soda. (I think. My memory for ties is a little fuzzy.)
